One of the highlights of the trip was a cooking workshop I attended, which was conducted by three African chefs. Bineta Diallo Dioh, the only woman, cooked Fonio a la Sauce Mafe, which was delicious.
She kindly shared the recipe with me, which is published in this month’s Wine Enthusiast.
Bineta’s restaurant, Le Point d’Interrogation, has closed, but she is very involved in Mangeons Local, a group that seeks to help preserve traditional dishes like this one. Visit this link, to find out more and read how you can help.
